Baking Class - Filhoses/Malassadas (Portuguese friend dough)
Learn to make the the Azorean favorite filhós/filhoses (also called malassadas)
Note: This is a demonstration class
In this class you will learn to make:
- How to make a potato starter
- How to properly mix the dough by hand or in a stand mixer
- How to properly prove the dough
- Flavor variations
- How to properly shape and deep fry
Each ticket allows access for one screen (multiple people may work from the same screen)
Shopping list and recipe will be provided 48 hours before class.
The class will be given over Zoom. Link will be provided 48 hours before class.
Note: This class will NOT be recorded to protect the privacy of all students.
You do not need a deep fat fryer to make these. A deep large pan like a Dutch oven works well.
You must have access to the following specialized kitchen equipment:
Digital thermometer (or candy thermometer)
Kitchen scale in grams is preferred but not required
Heavy stand mixer (like a kitchen aid) is optional
