​Polka Dater Bar Cookies

Ingredients:

226 grams (1 + 1/4 cup) dates, chopped
242 grams (1 cup) hot water
226 grams (1 cup) unsalted butter, softened 
250 grams (1 + 1/4) cup sugar
100 grams (2 large) eggs
245 grams (1 + 3/4 cups) bleached all-purpose flour
1 + 1/2 tsp baking soda
1 tsp vanilla extract or paste
170 grams (6 ounces) chocolate chips (any type or chopped chocolate) divided in half
125 grams (1 cup) walnuts, chopped and divided in half

Method:

1. Preheat oven to 350F. 
2. Line a 10 by 15 by 1 inch pan with parchement paper and grease the sides. 
3. Mix the chopped dates with the hot water and allow to cool. 
4. Cream butter and sugar together in a stand mixer for 2 to 3 minutes until light and fluffy. 
5. Add the eggs one at a time and beat until fully incorporated scraping the bowl often.
6. Gradually add the flour and baking soda. 
7. Using a spatula fold in the date mixture, vanilla, half of the of the chocolate chips (85 grams) and half of the walnuts (63 grams).
8. Spread into the prepared pan.
9. Sprinkle remaining chocolate chips and walnuts over the top.
10. Bake for 30 minutes until set. 
​11. Cool in pan before cutting into squares or rectangles.
