This traditional yeasted molasses cake from the island of Madeira keeps extremely well. Full of spice, nuts and candied citron, it's traditional to enjoy by pinching off pieces instead of slicing with a knife.

Ingredients: Unbleached white wheat flour, molasses, butter, sugar, candied citron, walnuts, almonds, orange juice and zest, Madeira wine, brandy, cinnamon, nutmeg, anise, cloves, sea salt, baking soda, yeast lemon zest.
