Polka Dater Bar Cookies by Maxine Duarte (Jeremiah's Grandma) Ingredients:
1 + 1/4 cup (226 grams) dates, chopped 1 cup (242 grams) hot water 1 cup (226 grams) unsalted butter, softened 1 + 1/4 cup (250 grams) sugar 2 large (100 grams) eggs 1 + 3/4 cups (245 grams) bleached all-purpose flour 1 + 1/2 tsp baking soda 1 tsp vanilla extract or paste 6 ounces (170 grams) chocolate chips (any type) divided in half 1 cup walnuts, chopped and divided in half
1. Preheat oven to 350F. 2. Line a 10 by 15 by 1 inch pan with parchement paper and grease the sides. 3. Mix the chopped dates with the hot water and allow to cool. 4. Cream butter and sugar together in a stand mixer until light and fluffy. 5. Add the eggs one at a time and beat until fully incorporated. 6. Gradually add the flour and baking soda. 7. Using a spatula fold in the date mixture, vanilla, 3 ounces (85 grams) of the chocolate chips, and half of the walnuts. 8. Spread into the prepared pan. 9. Sprinkle remaining chocolate chips and walnuts over the top. 10. Bake for 30 minutes until set. 11. Cool before cutting.
